May Recipes - Receta De Mayo LuzDelMes

Honey Chicken 
When your daughter teach you a dish, 
it is worth to share it! 

Ingredients :
1 breast in squares
1 Garlic
1 Spoon grated ginger
1 Spoon olive oil
1/4 Water
2 Spoon vinager
4 Spoon soy sauce
3 Spoon honey

Preparation:
In a pan place olive oil and 1/2 garlic in small piece until golden.
Add chicken to coat.
Add water, vinager, soy sauce and honey until golden brown. Add more garlic and ginger. Cook five more minutes.
Serve with white rice.

                        Pollo Dulce
Cuando tu hija te enseña una receta,
vale la pena compartirla. ¡Aquí va!


Ingredientes:
1 pechuga de pollo en cuadros
1 ajo picado
1 cuchara de ginger rallado
1 cuchara de aceite de oliva
1/4 de agua
2 cucharas de vinagre

Preparación:
Colocar ajo picado y aceite de oliva, agregar el pollo en cuadritos por cinco minutos, agregar poco a poco agua, vinagre, soy sauce y miel hasta que esté dorado. Finalice con ginger rallado.
Servir con arroz blanco.

LuzDelMes Easter Recipe - Receta para Pascua

When I want to connect with my Colombian’ roots, I prepare “Huevos Pericos” with arepas and hot chocolate. My Mom used to make this delicious breakfast for my birthday or special Sundays, like Christmas or Easter. It is a quick and easy egg recipe and one of the most popular breakfast dishes in Colombia which we serve with arepas, hot chocolate or coffee. Here is my Mom’s recipe:

Huevos Pericos (Scrambled Eggs with Tomato and Scallions)
Arepa with Huevos Pericos
Ingredients: (4 Servings)
·       4 eggs
·       2 medium tomatoes, finely chopped
·       2 tablespoons olive oil
·       4 tablespoons chopped scallions
·       Salt to taste
Preparation:
1.     In a medium non-stick skillet heat the oil over medium heat. Add the tomatoes and scallions and cook about 5 minutes, stirring occasionally.
2.     Meanwhile, in a small bowl beat the eggs and salt. Pour the eggs in the skillet with the tomato mixture and cook over medium heat, without stirring, until mixture begins to set.
3.     Stir twice or until the eggs mix with the tomato and scallions for about 2 minutes or until the eggs are the consistency you like.
4.     Transfer to a serving plate and serve with arepa and hot chocolate or coffee.
NOTE : 
Arepa (Spanish pronunciation: [aˈɾepa]) is a type of food made of ground maize dough, originating from the northern region of South America in pre-Columbian times, and is notable in the cuisines of Colombia and VENEZUELA. The sizes, maize types, and added ingredients vary its preparation.

Time has passed, my Mom is in heaven, and my daughter didn’t like “Huevos.” She changed the Colombian tradition and asked me one day for “Calentado” on her birthday. Do you know what it is?

Calentado without Egg...

Calentado literally means “heated” and is a traditional Colombian breakfast born in the Andean region of the country. It is very common in the area I was born, to eat rice and beans on weekends for dinner, then, for breakfast on Sunday, the rice and beans are reheated and served with egg, arepa,  grilled beef. Optional with chorizo, chicharrón and serve with hot chocolate or coffee. 

I have find this dish on the menu of almost any Colombian restaurant around the world. 
CELEBRATE TRADITIONS!
                                           
                      Desayuno Traditional  
Cuando quiero conectar me con mis raíces colombianas, preparo "Huevos Pericos" con arepas y chocolate caliente. Mi mamá solía hacer éste delicioso desayuno para mi cumpleaños, domingos especiales, Navidad o Pascua. Es una receta con huevos revueltos, cebolla verde y tomate picados,  rápida de preparar y fácil de hacer. Es uno de los desayunos más populares en Colombia que se sirve con arepas, chocolate caliente o café.
El tiempo ha pasado, mi mamá está en el cielo, y a mi hija no le gustaban los "Huevos". Ella cambió la tradición y me pidió un día "Calentado" en su cumpleaños. ¿Sabes lo que es? …
Calentado significa literalmente "calentado" y es un desayuno tradicional de la región andina del país. Es muy común, en la zona que nací, comer arroz y frijoles los fines de semana para la cena. Luego, para el desayuno del domingo, el arroz y los frijoles se recalientan y se sirven con huevo, arepa, chorizo, chicharrón o carne de res a la parrilla y chocolate caliente.

He encontrado este plato en el menú de casi cualquier restaurante colombiano de todo el mundo.

RECETA LuzDelMes: Arroz con leche ~ Rice pudding

Celebremos las tradiciones
La Nochebuena es un momento para celebrar las tradiciones y disfrutar con la familia y los amigos. Mi postre favorito durante  éste tiempo Decembrino es el arroz con leche. ¡Aquí está la receta de mi madre para ti!

ARROZ CON LECHE INGREDIENTES:

  2 tazas de arroz crudo
      12 tazas de leche
      1/2 taza de azúcar       
      1 lata grande de leche condensada
      1 cucharadita de esencia de vainilla       
      6 astillas de canela - Canela en polvo
      Uvas pasas al gusto

Preparación: 
Poner a hervir la leche y agregar las astillas de canela y azúcar, agregar el arroz y bajar el fuego al mínimo. Revolver constantemente y cocinar hasta que el arroz haya absorbido la leche. Aparte, mezclar la leche condensada con la esencia de vainilla y verter esta mezcla en la olla del arroz. dejar enfriar y al momento de servir agregar canela en polvo y/o uvas pasas. ¿Nos gustaría saber cuál es su tradición? ...Mi preferida es Arroz de leche.

Rice Pudding Recipe
Christmas Eve is a time to celebrate traditions and enjoy it with family and friends. My favorite dessert during this time is the Rice pudding. Here is my mother's recipe for you! 
Ingredients:
• 2 cups of white rice
• 12 cups of milk
• 1/2 cup sugar
• 1 big can of condense milk
• 1 teaspoon of Vanilla extract 
• 6 cinnamon sticks
• Cinnamon powder 

• Raisins



Preparation:

Put to boil the milk and add cinnamon sticks and sugar, add the rice and lower the heat to a minimum. Stir constantly and cook until the rice has absorbed the milk. Mix the condensed milk with the vanilla extract, and pour this mixture into the rice. Allow to cool and serve to add cinnamon powder and/or raisins.

RECETAS LuzDelMes: Natilla y Buñuelos

El inicio de la Novena de Navidad traen a mi memoria los deliciosos postres tradicionales de Colombia. Lejos de casa, aún celebro las tradiciones y busco la manera de comprar los ingredientes o sustitutos para comer una deliciosa natilla con buñuelos. Les comparto la receta de mi madre que me dejó como herencia de las tradiciones de mi tierra natal. 

NATILLA : INGREDIENTES

·           2 litros de leche
·       2 tazas de fécula de maíz
·       1/2 libra de azúcar blanca
·       4 astillas de canela
·       2 cucharadas de mantequilla
·       Dulce de moras o Arequipe
·       Canela en polvo

Preparación:
Poner a hervir a fuego lento el azúcar con 1/2 litro de leche. Aparte, disolver la fécula de maíz en el 1/2 litro de leche restante y agregar a la olla junto con la mantequilla y la canela. Revolver lentamente y luego de 10 minutos sacar un poco de la mezcla con una cuchara y poner en un plato. Si está compacta y no se pega al plato, retirar la olla del fuego y dejar enfriar. Para el dulce de moras: Poner las moras en una olla a fuego lento y agregarles una cucharada de azúcar. Cocinar hasta que el jugo de las moras esté espeso.

BUÑUELOS:  INGREDIENTES

·       75 gr. de mantequilla
·       500 gr. de harina
·       1/4 litro de agua
·       4-5 huevos
·       Una pizca de sal
·       Aceite de Oliva

Preparación:

Poner a hervir el agua y la sal y agregar la mantequilla. Añadir el harina y revolver a fuego lento. Cuando la masa tome una consistencia seca, retirar del fuego y dejar templar. Añadir los huevos y revolver con la espátula. La masa debe quedar consistente. Aparte, calentar aceite en una olla y agregar los buñuelos, retirar cuando estén dorados.

RECETAS LuzDelmes para Invierno

CHOCOLATE 

Ingredientes:
• 1 taza de agua 
• 1 taza de leche

• 2 barras de chocolate

• 1 astilla de canela

Preparación: En la olla del chocolate colocar los ingredientes hasta que hierva. Batir bien hasta que haga espuma y servir caliente con queso mozzarella, si se desea. 
 ¡Comparte sus tradiciones! 

 Chocolate Recipe
Ingredients:
• 1 cup of water • 1 cup of milk • 2 chocolate bars • 1 cinnamon stick
Preparation:
On the stove, put the ingredients together to boil inside the chocolate pot. Add cinnamon sticks if you want to add a special flavor to the beverage. When is ready, whisk gentle to mix well. Serve hot with mozzarella cheese inside if desired.
