Easter in Quarantine - Pascua en Cuarentena

This Easter has been a unique time in history. A virus turned down all projects and celebrations, but not our faith. It has shone more than ever wordwide.

It’s time to leave behind the spiritual winter and celebrate the season of Florida Easter. As Christians we were welcoming Florid Easter, a time of renewal. Other traditions welcome Spring as symbol of new life. Trees, plants, fields are beginning to turn green and blossom; new life is emerging from the ground. Just as winter symbolizes death, spring symbolizes new life. Happy Easter!

Ésta Pascua ha sido histórica. Un virus cambio todos nuestros proyectos y celebraciones, pero no apago nuestra fe que está más viva que nunca en todo el mundo. 
Es hora de dejar atrás el invierno espiritual y celebrar el tiempo de Pascua Florida. Como cristianos/as le damos la bienvenida a la Pascua Florida o tiempo de renovación. Otras tradiciones dan la bienvenida a la primavera como símbolo de una nueva vida. Los árboles, las plantas, los campos están comenzando a volverse verdes y florecer; nueva vida está emergiendo de la tierra. Así como el invierno simboliza la muerte, la primavera simboliza una nueva vida. ¡Felices Pascuas!

LuzDelMes Easter Recipe - Receta para Pascua

When I want to connect with my Colombian’ roots, I prepare “Huevos Pericos” with arepas and hot chocolate. My Mom used to make this delicious breakfast for my birthday or special Sundays, like Christmas or Easter. It is a quick and easy egg recipe and one of the most popular breakfast dishes in Colombia which we serve with arepas, hot chocolate or coffee. Here is my Mom’s recipe:

Huevos Pericos (Scrambled Eggs with Tomato and Scallions)
Arepa with Huevos Pericos
Ingredients: (4 Servings)
·       4 eggs
·       2 medium tomatoes, finely chopped
·       2 tablespoons olive oil
·       4 tablespoons chopped scallions
·       Salt to taste
Preparation:
1.     In a medium non-stick skillet heat the oil over medium heat. Add the tomatoes and scallions and cook about 5 minutes, stirring occasionally.
2.     Meanwhile, in a small bowl beat the eggs and salt. Pour the eggs in the skillet with the tomato mixture and cook over medium heat, without stirring, until mixture begins to set.
3.     Stir twice or until the eggs mix with the tomato and scallions for about 2 minutes or until the eggs are the consistency you like.
4.     Transfer to a serving plate and serve with arepa and hot chocolate or coffee.
NOTE : 
Arepa (Spanish pronunciation: [aˈɾepa]) is a type of food made of ground maize dough, originating from the northern region of South America in pre-Columbian times, and is notable in the cuisines of Colombia and VENEZUELA. The sizes, maize types, and added ingredients vary its preparation.

Time has passed, my Mom is in heaven, and my daughter didn’t like “Huevos.” She changed the Colombian tradition and asked me one day for “Calentado” on her birthday. Do you know what it is?

Calentado without Egg...

Calentado literally means “heated” and is a traditional Colombian breakfast born in the Andean region of the country. It is very common in the area I was born, to eat rice and beans on weekends for dinner, then, for breakfast on Sunday, the rice and beans are reheated and served with egg, arepa,  grilled beef. Optional with chorizo, chicharrón and serve with hot chocolate or coffee. 

I have find this dish on the menu of almost any Colombian restaurant around the world.

                      Desayuno Traditional  
Cuando quiero conectar me con mis raíces colombianas, preparo "Huevos Pericos" con arepas y chocolate caliente. Mi mamá solía hacer éste delicioso desayuno para mi cumpleaños, domingos especiales, Navidad o Pascua. Es una receta con huevos revueltos, cebolla verde y tomate picados,  rápida de preparar y fácil de hacer. Es uno de los desayunos más populares en Colombia que se sirve con arepas, chocolate caliente o café.
El tiempo ha pasado, mi mamá está en el cielo, y a mi hija no le gustaban los "Huevos". Ella cambió la tradición y me pidió un día "Calentado" en su cumpleaños. ¿Sabes lo que es? …
Calentado significa literalmente "calentado" y es un desayuno tradicional de la región andina del país. Es muy común, en la zona que nací, comer arroz y frijoles los fines de semana para la cena. Luego, para el desayuno del domingo, el arroz y los frijoles se recalientan y se sirven con huevo, arepa, chorizo, chicharrón o carne de res a la parrilla y chocolate caliente.

He encontrado este plato en el menú de casi cualquier restaurante colombiano de todo el mundo.

Holy Week meaning ~ Significado Semana Santa

Holy Week is Holy Week! I grew up with that idea. It was a time of silence and prayer especially during the Paschal Triduum For me, it’s difficult to connect with work or daily activities just as a regular week. Holy Week it’s time to reflect and connect with the real reason of the passion and resurrection of Jesus.

Paschal Triduum: Evening of Holy Thursday, Good Friday, Holy Saturday and evening of Easter Sunday.

¡Semana Santa es Semana Santa! Crecí con esa idea. Era un momento de silencio y oración, especialmente durante el Triduo Pascual.  Para mí, es difícil conectarme con el trabajo o actividades diarias, así como si fuera una semana regular. Semana Santa es tiempo para reflexionar y conectar con la verdadera razón de la pasión y resurrección de Jesús.

Easter Goals ~ Metas de Pascua

Spring and Easter are associated with new beginnings, rebirth, growth and life. The days are longer, the earth is blooming, and everything awakens. 

We know that the word Easter mean Passover; from the Latin and Greek, Pascha and the Hebrew Pèsaj.  For Jews, it represents the transition from slavery to freedom, according to Exodus. For us Christians, commemorate the resurrection of Christ, giving passage from death to eternal life, according to the Scriptures. For Agnostics it means the supremacy of the spirit on the matter. 
Easter is the best time of the year, to start the goals for the New Year, to take care of health, improve the life style, and grow spiritually. Then, let's not forget to take ONE STEP to
Be the BEST version of you!

La Primavera y La Pascua están asociados con renacimiento, nuevos comienzos, crecimiento y vida. Los días son más largos, la tierra florece y todo despierta.

Sabemos que la palabra Pascua significa PASO; del Latín, Pascha y del hebreo, Pèsaj. Para los judíos, representa el PASO de la esclavitud a la libertad, según el Éxodo. Para nosotros los cristianos, conmemoramos la Resurrección de Cristo, dando PASO de la muerte a la vida eterna, según las Escrituras. Para los agnósticos significa la supremacía del espíritu sobre la materia. Entonces, no olvidemos dar ése PASO y SER la Mejor versión de nosotros mismos. Pascua es el MEJOR momento del año, para iniciar las metas para el año nuevo, para cuidar la salud, mejorar el estilo de vida, crecer espiritualmente.
¡Se la Mejor versión de ti mismo!

Happy Easter 2018 - Felices Pascuas 2018

Easter or Pascha is the most important and oldest feast on the Christian Calendar. It is a celebration of hope and joy with the resurrection of Jesus Christ
Easter is preceded by Lent, a forty-day period of fasting and penance.

Easter date varies from year to year. Many Orthodox Churches base their Easter date on the Julian calendar, which often differs from Western Churches that use the Gregorian calendar. 


2017 & 2025, Western and Orthodox Easter falls on the same date: April 16th 
2018

E: April 8th
2019
W: April 21st.
E: April 28th
Let’s begin Easter or Pascha Season with a renewal spirit to become a better person and share good memories with family and friends. The Lord is risen!

La fecha de la Pascua varía de año en año. Las iglesias ortodoxas basan la fecha de Pascua en el calendario Juliano, que difiere algunas veces de las iglesias occidentales que usan el calendario Gregoriano.   En el año 2017 y el 2025 la Pascua Ortodoxa y Occidental será en la misma fecha.  PASCUA: 16 de abril de 2017 & 2025
En el 2018, la Pascua en Occidente es: Abril Primero y en Oriente: Abril 8
