How to make a delicious Lentil Soup for Lent?
But, what is Lent and Fasting?
Lent is a sacred season in the Christian calendar dedicated to prayer, fasting, and almsgiving as we prepare our hearts for Easter.
The spiritual purpose of these practices is beautifully expressed by St.
Augustine in his Sermon on Prayer and Fasting:
“Abstinence purifies the soul, elevates the mind, and subordinates the flesh to the spirit.”
Before cooking
Rinse lentils in cold water, pick over to remove debris or shriveled lentils, then drain. Lentils do not require to be soak before cooking, but it can be soaked in order to reduce cooking time by about half.
Directions
1. In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery.
2. Cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
3. Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour.
4. Enjoy with bread or crackers.
Perfect soup for cold days and lent!
